RECIPES FROM RITA: HOMEMADE SPAGHETTI SAUCE
- Ingredients
- 1½-2 pounds fresh ripe tomatoes
- 1 nice clove garlic
- ¼ cup olive oil
- Salt and pepper to taste
- Handful fresh basil leaves, torn into small pieces or sliced into ribbons
- Optional but real good: Parmesan, fresh mozzarella, feta or burrata cheese
Instructions
- Slice the tomatoes into small chunks. If you’re using cherry/grape tomatoes, slice in halfor quarters Put the tomatoes in a large bowl.
- Grate the garlic clove over the tomatoes or chop fine.
- Pour the olive oil over the tomatoes and sprinkle with the salt. Stir to combine – I like to smoosh the tomatoes down a bit to release some juice, and then add the basil. Add pepper if you like. Red pepper flakes are good!
- Add hot cooked pasta to the bowl and toss, then stir in cheese.
