RECIPES FROM RITA: BACKPACK GRANOLA WITH SALTED MIXED NUTS
Perfect for a snack or as a breakfast cereal or to top yogurt.
4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 cup or so salted mixed nuts, chopped a bit or 1 cup plain mixed nuts or favorite nuts (Note: if using plain nuts, add 1/2 teaspoon or so salt)
1/2 cup seeds – I used pepitas
3/4 teaspoon cinnamon, apple pie spice or pumpkin pie spice (MATT WHICH SPICE WOULD YOU PUT IN?)
Coating
1/2 cup olive oil
1/2 cup honey or maple syrup or combo of both – I used 1/4 cup each
2 teaspoons vanilla extract
Add in after cooling
1/2 to 1 cup dried fruit, chopped if large
INSTRUCTIONS
Preheat oven to 350 and spray a large, rimmed baking sheet.
Combine oats, nuts and/or seeds, salt if using, and cinnamon. Stir to blend.
Whisk together oil, maple syrup and/or honey and vanilla. Pour over oat mixture and coat well. Pour onto pan and spread it in an even layer.
Bake until lightly golden, about 21 to 24 minutes, stirring halfway – AND STIR FROM OUTSIDE EDGES IN, SINCE HEAT STARTS THERE.
After cooled completely, stir in fruit and chips.
Makes about 9 or so cups
Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months.

Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes (If using coconut flakes, stir in about halfway through baking time)
Make it nut free: Use seeds, like pepitas or sunflower seeds, instead of nuts.
