A Prayer to Our Lady, Health of the Sick
Our Lady, Health of the Sick,
I look to you for the comfort of a mother’s love,

RECIPE FROM RITA: SOUTHWESTERN LASAGNA
Ingredients:
1 pound ground sirloin or other beef, or poultry
14 1/2 oz can chopped tomatoes with juice – I used fire roasted
4 oz can chopped green chilies, drained or fresh jalapeno, chopped
2-3 teaspoons chili powder blend
1-1/2 -2 teaspoons ground cumin
1 nice clove garlic, minced – a heaping teaspoon or so
Salt and pepper
2 egg whites
2 cups cottage cheese, whirled in blender if you like for smoothness – I like small curd ( MATT what do you think about using ricotta?)
14 (yes, that’s right) 6-inch corn or flour tortillas cut into quarters – can use gluten free
1 small bag frozen corn (10 oz or so), thawed or 1 can corn, drained
8-12 oz (2-3 cups) shredded Mexican blend or cheddar cheese
Instructions:
Preheat oven 350. Spray a 13x9x2-inch baking dish.
Cook meat in skillet until done. Add tomatoes, chilies, chili powder, cumin, garlic, and season to taste. Set aside.
Blend egg whites and cottage cheese. Set aside.
Line baking dish with six quartered tortillas.
Layer all the corn, half meat mixture, half cheese, four quartered tortillas, then all cottage cheese mixture on top.
Add remaining half meat mixture, and remaining four quartered tortillas.
Top with remaining cheese. Bake, uncovered 30 minutes or so.
