RECIPE FROM RITA: GARDEN TOMATO AND CHEESE TART
1 pie crust
All purpose flour
2 cups Fontina or Mozzarella cheese, shredded
3/4 cup mayonnaise
1 clove garlic, minced
Salt and pepper
Thick sliced tomatoes
6-7 scallions/green onions, chopped
Fresh basil, chopped
Romano or Parmesan cheese for garnish
Preheat oven to 375. Prick crust in pie pan and bake on bottom shelf of oven 10 minutes. Sprinkle the bottom with a little flour, about 1 tablespoon. Mix cheese, mayonnaise, garlic, salt and pepper. Spread a thin layer on the bottom of the crust. Lay enough tomatoes on top to make a layer. Spread remaining cheese mixture over tomatoes. Sprinkle with onions and basil. Smooth top, pushing onions and basil into cheese mixture. Bake until puffed and golden, about 20 minutes. Sprinkle with Romano.
EVEN EASIER
Layer sliced mozzarella and a few shakes of garlic powder with sliced tomatoes, drizzle with olive oil, top with Parmesan and fresh basil and run under broiler for a few minutes.
