RECIPES FROM RITA: COBB SALAD
Base: chopped iceberg or Romaine lettuce or mix of your favorite greens
Now as far as the toppings, anything goes as long as you put it in piles or rows on top of the greens. Today I used:
Bacon, crumbled
Blue cheese crumbled
Grape or cherry tomatoes, sliced or diced regular tomatoes
Hard boiled eggs, sliced thin – or now some folks like “jammy” eggs
Red onion, sliced thin
Olives (optional)
Cucumbers (optional)
Grilled chicken or salmon (pan or oven roasted and cooled) – I used salmon
Assembly:
Line a shallow platter or bowl with an inch of chopped lettuce
Add toppings in rows, spaced enough between each row to fit the platter or bowl. Drizzle on your favorite dressing.
SPEED SCRATCH AVOCADO RANCH DRESSING
Ingredients
1 ripe avocado, mashed real fine
1 cup real mayonnaise
1/2 cup each: sour cream and milk
Shake of cayenne (optional)
Instructions
Just whisk everything together!
HOMEMADE RANCH DRESSING
1/2 cup each mayonnaise, sour cream and milk or buttermilk
1 teaspoon dried dill weed or 1 tablespoon fresh
Minced parsley and chives to taste- start with 2 teaspoons each (or you can use finely minced green onion)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste (black or cayenne pepper)
Lemon juice to taste
Instructions
Whisk everything together except lemon juice. Taste for seasonings and then add lemon juice. Start with 1 teaspoon and go from there.
AVOCADO RANCH
Just mash a ripe avocado real fine and stir it into the dressing.
