Collect for the Martyrs of Nagasaki

O God, strength of all the Saints, who through the Cross were pleased to call the Martyrs Saint Paul Miki and companions to life, grant, we pray, that by their intercession we may hold with courage even until death to the faith that we profess. Through our Lord Jesus Christ, your Son, who lives and reigns with you in the unity of the Holy Spirit, God, for ever and ever.

SUPER BOWL RECIPES FROM RITA HEIKENFELD

CHEESEBURGER PIZZA

Ingredients

  • 1/2 pound or more lean beef
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 Boboli pizza shell, 11” or other pre-baked pizza shell
  • 1 generous cup tartar sauce (I use Frisch’s tartar sauce)
  • 8 oz. shredded extra sharp or sharp cheddar cheese
  • Shredded iceberg lettuce
  • Dill pickles, finely chopped

Instructions

  1. Cook beef with garlic, salt and pepper in a nonstick skillet. Set aside.
  2. Brush both sides of pizza shell with olive oil.
  3. Bake crust on 450 according to package directions just until slightly golden but not done. 
  4. Spread tartar sauce on pizza shell.
  5. Sprinkle ground beef mixture evenly on top. 
  6. Cover with shredded cheese.
  7. Bake another 5 minutes or so until cheese melts. Start checking after 5 minutes.
  8. Top with shredded iceberg lettuce and dill pickles.

Yield: Cut into 8 wedges for larger servings, or 16 for appetizers.

BACON WRAPPED LITTLE SMOKIES

Ingredients

About 1 pound bacon
16 oz package little smokie sausages 

1 generous cup brown sugar or more to taste – I usually use a bit more 

Instructions

Preheat oven to 350.

Slice bacon into thirds and wrap each strip around a smokie. 

Place several smokies on a skewer, then place on sprayed baking sheet. (You can also put toothpicks into individual smokies but the skewer is easier).

Sprinkle generously with brown sugar. 

Bake until bacon is crisp and brown sugar is melted, about 20 minutes.
