Recipes from Rita
ITALIAN SAUSAGE AND RAVIOLI CASSEROLE
Ingredients:
1 pound bulk Italian sausage, mild or hot
1 small onion, chopped
2 teaspoons/2 cloves garlic, minced
26 oz jar favorite pasta sauce (I like plain Marinara)
1 bag frozen cheese filled ravioli – about 24 oz or so
3-4 cups Italian cheese blend
Instructions:
Heat oven to 350.
Cook sausage, onion and garlic over medium-high heat in skillet until sausage is done. Stir in pasta sauce.
Spray a 9×13 pan. Spread1cup of the sausage mixture into bottom. Arrange half of the ravioli on top, then sprinkle with half Italian cheese. Top with remaining ravioli, sausage mixture and rest of cheese.
Cover with foil and bake 45 to 50 minutes or until thoroughly heated. Remove foil and bake until cheese is melted. Let rest 15 minutes before serving.
TATER TOT CASSEROLE
Ingredients:
Olive oil, enough to film bottom of skillet
1/3 cup diced onion
1 pound ground beef
1 teaspoon garlic salt
Salt and pepper
1/2 cup sour cream
10.5 ounce can condensed cream of chicken soup
8 oz. shredded sharp cheddar cheese
1/2 cup milk
28 ounce bag frozen tater tots
Instructions:
Preheat oven to 350-degrees and spray 9″ x 13″ casserole.
Add oil to large skillet, add onions and cook until translucent and a little golden brown.
Add beef and cook until done. Pour everything into large bowl.
Add salt, pepper, garlic salt, sour cream, soup, cheese, and milk. Give it all a good stir.
Pour evenly into casserole.
Top with tater tots.
Bake approximately 45 minutes or until tots are golden brown.
Tip: To get extra crispy tater tots, turn the oven on broil for the last five minutes. You’ll have some delicious golden taters!
